Homemade Pizza

My favorite pizza is Panago's Chicken Club, I'm really not a fan of tomato sauce, so any pizza without it is a hit with me.  I made the dough using the recipe below, then added jalapeno ranch sauce, chicken and cheese as toppings.  It turned out well and tasted excellent so I have every intention of making it again.  One thing I learned is that making the pizza dough thin enough really is an art, the ones I made were way to thick so next time I need to get the crust thinner before I add the toppings, maybe I'll try tossing it like real pizzamen do.

Pizza Dough

2 1/2 tsp yeast
1 Tbsp sugar
2 1/2 cups warm water
2 Tbsp olive oil
1 Tbsp salt
1/2 cup whole wheat flour
5 1/2 cup all purpose flour

1. Dissolve yeast and sugar in warm water, let sit until creamy. 5-10 minutes.
2. Stir in olive oil, salt, whole wheat flour and 4 cups all purpose flour.  Add remaining flour 1/2 at a time, stir well after each addition. Knead dough until smooth and elastic.  8-10 minutes. Lightly oil a large mixing bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and put in a warm place to rise until doubled in volume; about 1 hour.
3. Deflate the dough and turn it out onto a lightly floured surface. Divide the dough into three equal pieces and form into rounds. Cover the rounds and let them rest for about 10 minutes. Preheat oven to 425 degrees F
4. Use a rolling pin to roll the dough into the desired shape, cover it with your favorite toppings and bake at 425 degrees F for about 20 minutes (I found 20 too long, try 15-17minutes) or until the crust and cheese are golden brown.
